I have found a project called impress.js on the GitHub.

This project has a cool demo at http://bartaz.github.com/impress.js

How can I use GitHub in a similar way for my projects' demos (or at least for HTML-formatted online docs)?

They are called GitHub Pages. Here are the details on how to set it up.

Actually by your description it looks like that you push all your content to master branch while GitHub use an orphan branch named gh-pages to serve GitHub pages.
