First go to the document you want to link to and copy the URL. Then add it into the HYPERLINK function in a spreadsheet, should look something like:

=HYPERLINK("https://docs.google.com/document/d/238urwfuafhki8w4n8fddwaso45dxw445f/edit","my google document")

Don't forget the surrounding quotes.
