I have made up many files to store e-mails in. Some of them I would like to delete. How can I go about doing that?

By files, you mean folders, and gmail calls folders labels.

So just click the arrow to the right of your label, and then scroll down and click Remove Label. Finally, click Delete in the pop up, and no more label (aka folder aka file).
