Neither Gmail nor Google Calendar support offline HTML5 support. From my (limited) discussions from people who work at Google it's eventually on their roadmap but not a priority. Naturally they could not comment on specific details. :(

This is probably unrelated, but: Fog Creek brought Trello down along with other services until the generators at the data center they're using can be refueled. I believe your issue is with Firebug. Whenever I have Firebug enabled Gmail and Google Docs run very slow. In general I get a warning for this from Google. Have you tried going to http://m.gmail.com to access the mobile site directly ? This takes me straight to the Gmail mobile interface with no user agent switching required. hope this helps.
