The new Hangouts feature needs to be enabled by logging into the Admin console and going to Google Apps -> Talk/Hangouts -> Advanced Settings and select 'Enable the new Hangouts for users in this organizational unit'

You can quickly revert to the older chat interface in Gmail via the dropdown menu next to your name in the Hangouts area. You'll still have the new Hangouts UI in Google+ and mobile, just not in mail.

Very late answer, but here it goes: you could use the Hangouts On Air feature. Well, with Hangouts On Air, you can share and record your live discussions and performances with everyone! (Emphasis added by me.) Source.

I built http://OpenTokRTC.com to show people multi-party video chat functionality. It eventually replaced skype and google hangouts for me and my friends. Its open sourced and free, so feel free to take it for a spin! Unfortunately, it doesn't have all of the features you require (like screen-sharing), but it nailed everything else. Hope it helps!

No, it's not the same as Hangouts. Gtalk is more or less replaced by Hangouts. The IFTTT channel was quite limited in any case, but it won't work with Hangouts at all.

It's true that IFTTT's GTalk channel doesn't work with Hangouts, but I found a similar service, Zapier, that does. It's geared more towards business users, so the connected services include more service apps and less social media, and the free version is limited to 5 recepies (or Zaps), but it's something.

It appears Hangouts on my Android phone works without a Google+ account, but many features such as photo sharing are disabled. Hangouts for Chrome browser extension insists on creating a Google+ account. Things could change. I do not like how Google is pushing all users to Google+.

A hangout is indeed a public live stream video that is shown on Youtube, are you mistaking it for something else? Edit: What you are seeing on that page is called Hangouts on Air. You can't join such hangouts, only watch them. You can, however, join public hangouts that don't do any broadcasting.

I have a non-technological solution to this problem: I place a Post-It note on the back of the lid, and fold over enough of the non-sticky part of it over the bezel, up over the top of the lid, and on so that it covers the lens. Once I'm ready to be seen on-camera, I flip it over to reveal the lens.

Unfortunately, Google Hangouts does not have the feature. According to googlesystem.blogspot.com, it is actually an upgraded version of Google+ Messenger, not Google Chat or Talk, which is why Hangouts has very little in common with Talk.
