Unfortunately, there is no longer an option to switch back to Hotmail. Why can't I switch back to Hotmail? Over time, Hotmail will be phased out and Outlook.com will be the free email service from Microsoft. As part of this transition, we've removed the option to switch back to Hotmail. Source.

Outlook.com allows the creation of email aliases, which is essentially the same as the Gmail and Yahoo features that you mention. When creating a new email, click "To" on the left-hand side and select the name of a group you want to send to. There's an even better way to do this in Outlook.com! In the Outlook People category scroll to the bottom off your contacts and look for the red box with a white # character in it. Click on this red box and you will get this index, instead of only 2 groups, now you've got 26 groups, all created automatically:

I have just verified it again and copy paste of the contacts is working fine. Are you facing issues on any specific browser? When you log in into your Hotmail client, you should be able to go to Options and then choose Upgrade to Outlook.com It also should not matter, what you use as login to your Windows Live account - it can be even GMail.
