Generally they roll features out rather than turning them on for everyone all at once. Are you in the U.S.? Are you using google.com? What's a sample search term you're using? (It's possible that Google isn't recognizing it as a flight number.)

You say Gmail but then you start talking about contacts. Your best bet is to export your contacts, use a powerful text editor to do a global search-and-replace, then re-import your contacts. If that's not what you're after, please edit your question to clarify what it is you're trying to do.

It probably has everything to do with being Creator vs. Organizer. Is this a shared calendar? Were these events generated by something else (salesforce.com, for instance)? Is this the regular Google Calendar or are you using Google Apps?
