I am working on a spreadsheet for a business. I have been copying and pasting phone numbers, names, emails, and their ID numbers. This particular number, 8739297430300090 is defaulting to 8.7393E+15. I haven't asked for it, I don't see that I have done anything differently, I even tried a new cell, same thing.

Google Sheets as well other spreadsheet apps have some default rules for displaying numbers. If you don't like the default format applied you could set a custom format. For details please checkout of official help article Format numbers in a spreadsheet.

Another option is to prepend an ' (single quote character, apostrophe): '8739297430300090. The apostrophe only will be displayed in the formula bar and when you set the cell to edit mode.
